Special Christmas menu.

The farmers market at Tunbridge Wells will be open for a special Christmas event this Monday the 22nd of December. We would love you all to come down and share some mulled wine and  mince pies with us – as well as our special Christmas Menu.

Our famous Salt Beef Sandwich – served with Chipolte Coleslaw and Pickles on Rye

We will have our two usual best sellers. Our 8 hour smoked pulled pork, which I know many of you love and our famous Salt Beef on Rye with pickles and Mustard sauce. Added to that we have a few Christmas specials – including our own home made mulled wine with Mince pies as a snack and a chance to stop and say hello. Our Christmas dish this Monday will be a Rotisserie Turkey with Chorizo, Apple Chipolte Coleslaw, Cranberry Sauce with an option of Fondu Cheese on top. We have made this before and it is very very tasty.

Last week we sold a new dish for us, a very beefy and spicy Chillie con Carne. It was a big hit, with a few customers coming back for second helpings – so we will be doing the same this Monday, we serve it with a butter roll and dotted with sour cream and chives.

Our Home Made Pea and Ham soup will be served with a fresh butter roll – perfect for keeping the cold at Bay.

And finally to keep the cold at bay – we have on offer our home made piping hot Ham and Pea soup, with chunks of ham and and real peas. You all know our cooking by now so you know it will be generously packed with ham and flavour.

Discovering a new menu item

It’s great experimenting with food and coming up with something new. As we returned to base after our last event on Friday we noticed as a couple of remaining hocks cooled down in their cooking liquid (Beer), it formed a fantastically tasty aspic. So with the remaining hock meat and some cooked carrot I made an hock in aspic a bit like the French classic “Ham and Parsley in Aspic” – added a bit of salt and lots of pepper – it could have been crap – you never know. But even I had to admit this is one of the best things I’ve tasted this year – served with a little mustard and cornichon – fantastic. I’m going to make this as an entree dish for the summer.

Great menu this Saturday at Tunbridge Wells Farmers Market

Hope you can join us this week at Tunbridge Wells Farmers Market – we had a great time two weeks ago and met some fabulously well informed foodies, including a former New York City cop – who appraised our salt beef sandwich as one of the best he’s ever had. The Menu this Saturday (25th of October) will be our regular largish meals – Our famous Salt beef sandwich and our 8 hour smoked pulled pork sandwich. Also we realise that a lot of people want just a snack or something small to warm up with so we will be doing a Boston seafood chowder, jam packed with white fish, mussels, salmon and cream and served with crackers or our own home baked mini chowder buns. Our our fish and seafood are both sustainable and organic.

And we will also be baking one of Americas’s most famous comfort foods – a cheesy, creamy “mac and cheese” Or as we’d say over here a maccaroni and cheese bake. We start this with a creamy white sauce to which we add obscene amounts of organic cheddar, parmesan and mozzarella and top with a crunchy topping for even more flavour. Both these smaller dishes will be available for under £5.00.

A great lunch

Always looking for more and better flavours – so cooked this up for lunch today. Little gem lettuce tossed with some of our home made coleslaw and topped with our cajun blackened sea-bass. Wow fabulous light lunch with a crunch from the lettuce topped with the lime-mayo sauce from the coleslaw – topped with crispy spicy fish. I think we may be doing this from the truck at some time in the future.

A garden Party for 100 people in an idyllic setting

The organisers of this very stylish birthday party wanted a relaxed atmosphere in the garden and they got just that. With outdoor lounges and coverings for a shill-out area, a fully staffed wet-bar and the Deli Truck – the feeling was informal, chic, elegant and fun. And the guests certainly had fun.  Guests started dropping in from 4.00 PM until 9.00 PM, with mosts staying on to drink and talk the night away until well into the small hours.  We served a hot menu selected by the hostess from the truck with an accompanying buffet of salads and our home made lemonade – later we served freshly brewed coffee and tea.

The menu was chosen in consultation with the hostess (it was her husbands 50th birthday) and turned out to be a real winner. We ended up cooking our spectacular burger which everyone seems to have heard about and always wants. We accompanied this with our 12 hour smoked pulled pork which was a huge hit and chicken breast stuffed with chorizo and parmesan cheese, then poached in chicken broth, white wine and butter – served with a dollop of home made pesto on top. I’ll leave the final words to the hostess who emailed us 48 hours after the party. She said “Thank you for such wonderful food and ambience at our Garden Party – wow what a wonderful day. Everyone was blown away by the Deli Truck and I am sure you must have run out of your info sheets. Thank you also for organising such thoughtful and helpful assistants – it meant we could both relax and enjoy the company of our guests.”

One of our more unusual requests. An American client has asked me to feed his creative team for lunch tomorrow. It’s a surprise for their hard work. He specified smoked turkey cooked on a rotisserie accompanied by mac & Cheese, our special coleslaw, biscuits and gravy. Finished with key lime pie and pecan pie. A great American menu. But the turkey is certainly the king.  We used charcoal for the fire and Oak and Apple wood for the smoke. It Looks fantastic.

Join us for our once a month BMW feast at the BMW motorcycle dealership in Tunbridge Wells tomorrow (saturday 31st of May) Menu is our usual yummy stuff – to include – our outrageous double cheese, double bacon burger, our I8 our smoked pulled pork sandwich and our cajun fish sandwich on panini. Weather is going to be brilliant for a relaxing lunch. Hope to see you all there

Christening Party overlooking the weald of Kent for 40 adults and 15 children

We were asked to prepare a luxurious American style menu for a Christening Party in the grounds of a grand country house overlooking the Weald of Kent for 40 adults and 15 children. The host wasted smaller portions so that their guests could come back to the Deli  Truck again and again if they wished to taste the whole menu – Diner style. Hot dishes like the salt beef sandwich and the sea bass sandwich were made on the spot as the guests requested. Served this way the guests received their food at it’s freshest and best. We become the Gourmet Takeaway in the garden.

After all the work the picnic was a great success. The client was delighted and a steady stream of their friends dropped in for a chat and bite.

The client wanted lots of fun food as well – as this will be an outdoor picnic. They especially wanted home made sausage Rolls. We made a super yummy sausage base out of finely minced pork and beef along with lots of sage, oregano, pepper, onion, lardon and lots of grated cheddar. Your right this is not the diet version, but wow it tastes great.
